Candi sugar = sucrose. For those who have searched high and low for the good oil on candi sugar, the simple fact is that it is toffee in various colours. Plain/clear candi sugar is essentially sugar that has been melted and cast into a blob. Amber/mid candi sugar is close to normal toffee. Dark candi sugar is toffee that has been taken to the brink of burning, without letting it get an acrid flavour, and is the only version that is challenging to make. The basics - ... |
